
Chocolate Toffee
2 sticks butter
1 cup brown sugar
Enough saltine crackers to line the bottom of a 9"x13" baking dish (flat, side by side)
1-12 oz. bag semisweet chocolate chips
Preheat oven to 350 degrees F. Melt butter in a medium saucepan and add brown sugar. Bring to a rolling boil and boil for 3 minutes, constantly stirring (so the butter is all mixed in and doesn't separate out from the brown sugar - I've messed this part up many times). Line the bottom of the 9" x 13" baking dish with the saltine crackers. Pour the boiling butter and brown sugar mix over the crackers. Bake for 15 minutes. Immediately after removing from oven, pour the bag of chocolate chips over the mixture and distribute evenly. Use a spatula to smooth out chocolate evenly as it melts. Put in the refrigerator for 30-45 minutes. Break into pieces and serve. Store leftovers in airtight container.
