A few yummy brunch recipes for today!

Spinach & Bacon Quiche
9 in. pie crust
3 eggs, beaten
1 cup half and half
1 Tbsp. all-purpose flour
1/2 tsp. salt
10-oz. pkg. frozen chopped spinach, thawed and drained
1/4 cup green onions, chopped
10 slices bacon, cooked and crumbled
1 cup sharp Cheddar cheese, shredded
1 cup mozzarella cheese, shredded

In a large bowl, whisk together eggs, half-and-half, flour and salt. Stir in spinach, onions, bacon, and cheeses. Pour mixture into pie crust. Bake at 400 degrees F for 15 minutes; reduce temperature to 325 degrees F and bake for 30 additional minutes. Cool 10 minutes before serving.

Applesauce Puffs
2 cups Bisquick
1/2 cup sugar, divided
2 tsp. cinnamon, divided
1/2 cup applesauce
1/4 cup milk
1 egg, beaten
2 Tbsp. oil
2 Tbsp. butter, melted

Combine Bisquick, 1/4 cup sugar and one teaspoon cinnamon in a large mixing bowl; set aside. In a separate bowl, mix applesauce, milk, egg and oil and then pour into dry ingredients. Beat vigorously for 30 seconds. Line 24 muffin tin with paper muffin cups. Fill 2/3 full. Bake at 400 degrees for 12 minutes. Cool in pan for several minutes. Combine remaining sugar and cinnamon in a small bowl. Dip each puff in melted butter and then in cinnamon-sugar mixture. Makes 24.

Good Morning Pecan Casserole
8 oz. ground sausage
16-oz. loaf raisin-cinnamon bread, cut into cubes
6 eggs
1-1/2 cups milk
1-1/2 cups half and half
1 tsp. vanilla extract
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1 cup pecans, chopped
1/2 cup butter, softened
3 Tbsp. maple syrup

Crumble and brown sausage over medium heat in a skillet. Drain off fat. Coat a 9"x13" baking dish with cooking spray and place bread cubes in dish. Top evenly with sausage. In a large bowl, beat eggs, milk, half and half, vanilla, nutmeg and cinnamon together; pour over bread and sausage, pressing sausage and bread into egg mixture. Cover and refrigerate 8 hours or overnight. In a medium mixing bowl, combine brown sugar, pecans, butter and syrup; drop by teaspoonfuls over casserole. Bake at 350 degrees F for 35-40 minutes or until toothpick inserted in the center comes out clean.
